A healthier take on the classic Caesar using nutrient-dense kale, creamy avocado dressing, and crunchy chickpea croutons instead of bread.

Ingredients

  • 1 large bunch kale, stemmed and chopped
  • 1 can (15 oz) chickpeas, drained
  • 1 ripe avocado
  • 2 tbsp lemon juice
  • 1 tbsp tahini
  • 1 clove garlic
  • 2 tbsp extra virgin olive oil
  • 1 tbsp nutritional yeast
  • 2 tbsp hemp seeds
  • Salt and pepper to taste

Instructions

Preheat oven to 400°F. Toss chickpeas with 1 tbsp olive oil, salt, and pepper.

Roast chickpeas for 15 minutes until crispy. Set aside.

Make dressing: blend avocado, lemon juice, tahini, garlic, remaining olive oil, and nutritional yeast until smooth.

Place chopped kale in a large bowl. Add a pinch of salt.

Massage kale with your hands for 2-3 minutes until softened.

Toss kale with the avocado dressing until well coated.

Top with crispy chickpeas and hemp seeds. Serve immediately.
