Ingredients

  • 4 cups cauliflower rice
  • 1 tablespoon extra virgin olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 teaspoon turmeric
  • 1 large carrot, thinly sliced
  • 1 red bell pepper, chopped
  • 1 cup broccoli florets
  • 1/2 cup frozen peas
  • 2 green onions, sliced
  • 2 tablespoons soy sauce or tamari
  • 1 teaspoon sesame oil
  • 1 tablespoon chia seeds
  • fresh coriander, for garnish

Instructions

1

Heat the olive oil in a large skillet or wok over medium heat. Add the garlic, ginger, and turmeric, stirring until fragrant, about 1 minute.

Add the carrot, red bell pepper, and broccoli to the skillet. Stir-fry for about 5 minutes, until the vegetables are tender but still crisp.

4

Stir in the frozen peas, green onions, soy sauce, and sesame oil. Cook for an additional 2 minutes, or until everything is heated through and well combined.

5

Remove from heat and stir in the chia seeds for an omega-3 boost.

6

Serve hot, garnished with fresh coriander.
